| The safety and security of food continues to make headlines while getting the attention of regulators worldwide. Announcements from the USDA and FDA emphasize the importance of record keeping for ensuring food security.
Both agencies will require food providers to prove that their processed food can be traced back to its sources. Under the FDA's proposed rule, food manufacturers, processors, packers, distributors, receivers, holders, and importers of food will have to show that they know the source of each ingredient or product that they receive. They must trace back to that source from the products they ship. The USDA recently stated again that business records are critical in any FSIS investigation related to public health, food safety, and the misbranding of meat or poultry products.
